Does this stuff work? I've not found anything yet that really seems to add or replace the original water repellency of items I've had like coats, rucksacs etc.

Yep, it works very well. Wouldn't use anything else for washing and reproofing Gore-Tex jackets.

Yes, but (depending on the fabric), may require gentle ironing to activate the water repellency.

Sorry but this is incorrect. Heat is required for certain proofers (i.e. Grangers) that are flourocarbon based. Nikwax doesn't require heat as it is similar to a wax (not saying it is wax).
Also do not iron waterproof garments, you'll end up either melting them or destroying any breathability they may have by melting the microscopic pores that make up the membrane. If the proofer requires heat, throw it on low in a tumble dryer.
