How rude are some of these comments? Some of you need to get off your high horses and visit Lidl. My partner and I some time ago decided that we needed to cut our shopping budgets so we changed our regular supermarket from Asda to Lidl. Surprised is not the word the food is fresh and tasty and everything we buy is fresh (We don't do ready meals) the meat is fantastic and the fruit and veg is good value. On the odd occasion we shop at one of the big 4 they are full of chavs, people still in their pyjamas and fishwives shouting at their children. Oh and most of the Lidl stores I've frequented don't have the need for a permanent security guard...the people that shop there have more class! The ham is fab saw one today it's a bit early for us to buy Christmas food but my fiancé was definitely interested in buying one.

nice idea, but I doubt these will sell in Lidl at that price point, give it a week and they will be on special clearance offer

we've actually sold half of our stock already and they've only been on sale from today. Apparently this is cheap even compared to the continent. they are not re-ordetable so once they've sold out that's it until next year!

A similar type of meat is being offered through Amazon local less weight of the ham with a knife, sharpener and carving block for £85 and that is being advertised as as 49% saving so this is pretty good in comparison even when taking out the cost of the extras.

@jazzy1 it's a cured leg of pork, and you slice it thinly and have it as a starter, on its own or with bread.

The only way Lidl will shift these is up the jumper of the regular shop lifters - I mean customers!

Very good price. We buy from a local guy in the south of Spain and he charges the amazing price of £29/kilo, which people are always astounded at the value. Gives you some idea...

Then you are being ripped off for the 'Giri' that you are I'm afraid. Unless it's Pata Negra which I doubt, you shouldn't be paying even half of that - it's about that price retail in the UK pre packed. E7.50 / kg in Portugal and not much more in Spain. Whole legs (not shoulder) from Teruel (el mejor!) are about 40 - 50 Euros. Remember the Spanish economy is the walking dead....

That sounds very expensive, especially for Serrano ham.

Probably the Ham you try to buy on Spain was a better one. This is from a white pork and the one from Spain was not "Serrano Ham" probably it was "Iberian Ham" and this is a huge difference, so on the price.

FYI "Reserva" means nothing. The hams are "Iberico bellota", "Iberico recebo", "Iberico cebo" and "Serrano", from better to lower quality.

8 Nov 13 1 #21
Not sure, I expect it will need to be kept in a relatively dry environment, like biltong which I make on occasion (dried cured beef, similar to beef jerky only 10x better)

On the box it says its been matured for 12 months already, so a few months more would probably be ok as you go.

There were only 2 boxes left in my local store last night .. sent a pic to the wife of me holding the box so she could gauge the size. She sent a reply saying "wow .. it's so big" .. I curbed my response of "yes - they all say that ;-)"

8 Nov 13 #17
Mould is fine if it is just on the outside, it's a feature of the form. It will only be on top of the fat which you then cut away anyway.

This is a great deal - yes they are this cheap in Spain but in this country you're looking at a price closer to £100.

In terms of keeping it, ideally you need a cold place to store once opened and you'll need to cover the exposed part, best thing to use is a muslin cloth.

That is a prime example of not knowing what you intend to put in your mouth, air dry, along with the likes of salami is packed with nitrites & the like, having been prepped & brine soaked (for instance) then hung until moisture levels are at a satisfactory level (maturing or whatever you wish to explain it as) to assist the safe eating end product, which add to it's overall flavour whilst hanging in the air of a controlled environment.

Suggest you go & have a look at a proper deli counter, the principle is similar within cheese making, it's safe, it's as it's meant to be like that, often a crust as the outside is where the moisture from the inside is drawn out to prior to evaporation, (the weight loss is very extensive, this leg is a real bargain) ...get a knife properly sharpened & enjoy it!

I buy spanish, italian, argentinian hams for about a decade, and mould is a common thing for this product, just wipe it off with tissue dipped in olive oil.
saul123 to withomas
31 Jul 14 #77
The mould you find on jamon doesn't mean the ham is unfit for use; it happens from time to time, it's harmless and easy to clean off.

8 Nov 13 2 #16
Are you sure they're mouldy? Air dried meats tend to look a bit dodgy on the outside.
philak to tek-monkey

They are covered in mould after curing. They are then cleaned off. After shipping a small amount of mould will reform, but it can be wiped off with a tea towel and olive oil. It is not unfit for consumption.

It certainly seems cheap, although without knowing exactly where it's from and what grade it is, it's hard to tell - 7kg of a popular grade of jamón serrano in Spain would sell for about £50, although you can certainly find cheaper legs of ham.

If comparing prices, remember that jamón serrano is not the same as jamón iberico (the expensive, top-end stuff).

It's not very expensive for what we get. Good quality Serrano can be expensive as well - I can't remember if what we get is Serrano or Iberico, as not been for a bit, but the place we go is excellent value for money. I'm a native speaker and have lived in Spain, and known this man for years. I'm not getting ripped off.

If you are ever on the road between Pampaneira and Capileira in the Alpujarras (above Granada), around Bubión, look for the sign saying "Jamoncero Seco" on your left - the owner served in the merchant navy for many years and speaks English "fluently" - he actually does, but his accent is SO strong that it's easier for me to speak Spanish with him! - and will give you a tour of his facility. His cured meats are all absolutely amazing - the ham melts like butter.

Right, now off to book a trip to Spain................

I was lucky enough to attend a party last Christmas, where he had a 5 year old Iberico (about £700.00). It was beyond exquisite!!! I've just got off the phone asking for some advice...He says this is a great price for this kind of entry-level-ham!! So £39.99 later; My ham is being stored for our Family Christmas Eve buffet! I can't imagine it tasting anything like a £700 ham, but hey...I'm not a millionaire! So Merry Christmas to all and to all a goodbye X

Could it be, that people don't understand anything about this kind of ham?!?! The mould people are reporting is natural, and once removed, does not taint the meat in any way! The store staff know nothing about hung hams either! So they are all returned, recalled and now Lidl will Never stock them again!

Well the two I have look perfectly normal and the one I've opened tastes great. There is a very small amount of white mould visible on the skin - this is normal and you shouldn't be eating the outside of the ham. This is supposed to be hacked off and then slices of the meat taken from within. I have a video from a very prestigious Spanish ham maker which makes a point of showing off the mould - and in fact their hams look much mouldier than my two!

edit: just found the video I'm referring to online - from Cinco Jotas which is one of the very best ham producers in Spain. Have a look at their ham and see if it compares.

That does sound like too much mold for sure... it should only be a "dusting" not really any taller than the surface of the ham.

Just got back from the Lidl store in Binley, Coventry. Could not see any hams on display, I asked a member of staff if they were going to stock any more and he said that they were ordered to remove all stock from display this afternoon as they were being recalled, he said they had a couple of pallets that were being held in quarantine. He could not say why, all he would say was that the shop staff never get told as to the reason

If mould is a problem, just wipe the surface down with a cloth soaked in vinegar - soon clear it up. If it's as bad as what some folks are saying then it must have been stored somewhere a little too moist to allow the mould to develop.

Does anyone here know what a good serrano/iberico ham should taste like? The price is only good if the ham is half decent. I'd love to hear an opinion from someone who knows their spanish ham before I take the plunge. I'm not expecting it to be earth shattering, just wondering if it's passable by Spanish standards. A really good leg of jamon in Spain wouldn't go for much less than £200, but I know you can get something palatable for considerably less.

People returning the ham because of mold, just don't know what they are buying!
The mold is natural, and you have to cut through an inch or two of skin and fat before exposing the perfectly cured meat inside.

I have eaten Joselito 4yr Iberico hams costing nearly £600 each... Ham truly fit for a king!

BUT, this ham at £39.99 is absolutely superb!!!
Easily a hundred times better, than ANY vacuum packed Serrano TESCON will sell you.

6 slices of Serrano from Lidl is £1.49... The Serrano Ham Leg is over 6.5kg... Making it very cheap indeed!

This is truly a magnificent ham for the money. But you must understand what you are buying first.
There is plenty of information on hamlovers.co.uk. Or tutorials on youtube...
A little hard work, but more than worth it, in the end!!!

In the case of mine, this ham was not perfectly cured. It was notably soft to the touch on the outside and practically blue towards the bone, and began to smell off once that meat was exposed, so clearly not right.

The ham that Aldi got in was much better - perfectly cured with nice dark meat, and lovely tiny veins of fat running though the flesh - much like a nice Iberico. The reasonable ham knife and basic stand were a bonus.

I think there were different strategies at play between Lidl and Aldi - all the Lidl's round here got in loads of these hams, whereas the Aldi's had very few per store - I personally think Aldi were doing a loss-leader to get trade in the door whereas Lidl were selling a cheap ham cheap.

29 Dec 13 #67
Hi, So sorry to hear your ham was bad! I would disagree about the 'tit-for-tat' between Lidl and Aldi... I think you were just unlucky with your ham. Mine is superb, and I compare it directly to a £550 4yr Joselito Iberico ham. I'm no connoisseur, but I know what tastes good! For the most part people commenting about mold on their Hams, really don't know the product... I don't mean that from any elitist perspective either, but the comments speak for themselves...
(You might check out some Serranos on Amazon, they are dearer than Aldi or Lidl, but you can get them all year round...)

Good Luck for 2014

Kept in cool conditions a degree of surface mould is natural and as other people have said id wiped off and below is perfectly edible

I wonder how long these keep - ours is still unwrapped, as sold by Lidl, and I'm reluctant to open it until we can guarantee there being enough of us around to make a decent stab at it.

You don't need to freeze it! Cover the cut part with a piece of Muslin wet with Olive oil... These are dry cured for at least a year, so will keep for months if kept cool and dry! There are some excellent tutorials on youtube, on how to cut, and look after your ham! Good Luck!

Thanks for that - first time we've had one of these. It's still in its box, unopened and sealed in clingwrap, at the moment, with a BB date of 21 November. Dry - yes. Cool - no! No way of keeping it cool over the summer, really, is there?

Plan is to use it over Christmas when we have more people about. Beyond its BB date, but that won't matter - if it doesn't go off in the meantime. You'd reckon it will still be OK, then, despite the warm weather?
jmjmartin
19 Jul 14 1 #75
Yes! It should keep... Don't worry too much about the mold either...The 'Joselito' hams are hung for 4 years (albeit in perfect cool dry conditions...) I would be inclined to take it from the cling-wrap, and keep it air-dry too. If you can just keep it as cool & dark as conditions will allow... Be sure to check out 'hamlovers.co.uk for some invaluable info on getting the best from these Hams!
At £39.99, they really are the best value...The next cheapest one is around £79.00 plus postage from the Tapas lunch company. (I had one in March, and they are not as good as these from Lidl...
Let me know how you get on...

Best,
John

The Aldi ones were much, much better quality than the Lidl ones - I had two of each.
We must have been unlucky with our Lidl ones as one of them definitely wasn't well cured - from about 1/3 into the jamon the meat started turning blue and gray after exposure to the air. I took the other Lidl one back.
And yes, I'm a Spaniard, and know that mould on the outside is not a problem...

The Serrano ham tastes like soap is bad or should it be aired first or should I remove all the yellow fat?
bogofski
27 Dec 14 #81
You shouldn't be eating the yellow fat. It is called the "rancio" - i.e. the rancid...! It is a protective cap and pretty off tasting (soapy, as you say). The only fat you should be eating is that which is whitish in colour and not off the surface of the ham.

They are generally very good. I have had about 8 of these in the last couple of years. The only thing to watch is that I have had two which have been undercured - cure fine at the outside, but raw uncured meat in the middle. Keep your receipt, on both ocassions we have been refunded without issue.
